There may be otehr ways to do it, but the most reliable way to install Office 2000 and beyond is to create and administrative install - I think you use the /a switch (ex. setup.exe /a) to "install" the package to your file server, enter the product key, and configure the options as you like. It doesn't actually install it on your file server but puts all of the necessary files, keys, etc where you need them.
You can further customize your installation files by using the Custom Installation Wizard that is part of the Office 2003 Resource Kit.
