If you work in large organisations, out of office is usually mandated or at least very strongly recommended, particularly if you're going to be away for more than a day or two. And yes, it's not hard to unsubscribe from a list or set up a filter...but once you are subscribe to 20+, it's easy enough to forget one or two if you're working up to the last minute of your last day.
