Either way, XQuartz doesn't render fonts, it just renders the drawing instructions it receives from the client. The Freetype library on the client (Debian) takes care of translating the TrueType instructions into drawing instructions. Try to find Debian packages for the Infinality patches for Freetype and FontConfig. With those you will get font rendering that is even better than the Mac's native font rendering.
