When I was younger too, we at Macromedia used GM and GMC as Golden Master which 
was the shipping version and GMC was Golden Master Candidate.

We based our processes off of Apple's since our dev lead came from leading the 
QuickDraw GX team at Apple.

Not sure how it is done today, but that's what my memory recalls and I'm the 
guy who did a lot of the GM/GMC creation.
