I can see that "hyph-utf8" has patterns for several other Indian languages:

which will be part of the next TeX Live. And François will certainly be willing to add
support for those languages to his "polyglossia".
The latest version of polyglossia on CTAN (v1.2.0, released just a few days ago) already
has support for the following languages:
Bengali
Malayalam
Marathi
Tamil
Telugu
which have been added thanks to contributions by various translators of the Ubuntu Manual
project.
The credit for the new hyphenation patterns (which will be available in TL 2010) goes to
the maintainers of the respective patterns for OpenOffice and to Mojca Miklavec and Arthur
Reutenauer for integrating them into hyph-utf8.
