or
\fontspec[Mapping=mapname]{fontname}
or
\newfontfamily\<fontcommand>[Mapping=mapname]{System Family Name}
or
\newfontface\<fontcommand>[Mapping=mapname]{System Family Name Bold}
where bold can be Bold/Italic/Bold Italic/Normal,
if only part of the document should use the map or the font.
