Command is "redhat-config-xfree86"
There are options such as --reconfig but i just deleted all the XF86Config files and it worked a dream.

It looks like a problem with your XF86Config file.
You might want to backup the old config file:
mv /etc/X11/XF86Config /etc/X11/XF86Config-old
then configure X:
xf86config
Redhat might have a better way of configuring - I can't remember.
