XFree86 can support upto 16 screens at the moment, there's nothing stopping you increasing that limit. The define for this is in xc/programs/Xserver/include/misc.h and look for MAXSCREENS. Different drivers etc may or may not work though. Certainly a good percentage of drivers have never been tested with that many heads.
