Use the freeware utility srvany (I think you can find it on Microsoft web site, or on the major shareware download sites), which allow any program to be turned into a NT service.
A better solution is to use one of these:

These utilities are specifically designed for 100% pure java programs; you can also specify a shutdown procedure for your service. My personal choice is Free JNT.
