Do you have copies of the emails that are hanging the server? I had a few that did the same thing a while back, but could never find them to reproduce the problem. If you can find them, try sending them back to the server with filters turned off and see if it happens again.
I had suspected that there was the possilibity of some malformated messages that could hang XMail, but could never completely track it down.
