I don't like Xcdroast... is seems to do the audio CDs fine, but the data CDs weren't great.
cdrecord seems to be the standard. I like gcombust as the gui interface for it. It's still beta, but so far I haven't found any fatal bugs in it. (It requires mkisofs.) note: cdrecord doesn't support IDE CD drives directly.
