mame-cd (my little proggy) makes all that. It sorts games by year. You must use symlink farm option with mkhybrid when recording. It just creates the directory structure with the roms, then you have to create the ISOs for the resulting 6 (or 7?... mmm i haven't tried with .59) CDs.
