You can only customize the ``XML menu'' (call "XHTML" when opening an 
XHTML document, called "DocBook" after opening a DocBook document, etc) 
and the toolbar. See

Customizing anything in XXE GUI is a feature planned for V3.0 (codename 
``XXE ? la carte'', 2005).
