[XMPP4R] Callback priority and reference for Helpers

you said that the programmer shouldn't care about priority and reference
for callbacks used by Helper classes, there should be some default
values.

What do you think about...
priority = 100, ref = "Helper::Version" and ref = "Helper::Roster"?
