You will probably want to use VNC. VNC allows view-only sessions as well as regular sessions. One option is to use just a plain old X for the instructor and run x11vnc on that session and have the students connect to that from their machines. A good package to use is tightvnc. You can download from their website, or perhaps your distribution has it in its package manager.
