You will need to create rules under the IMAP tab in Rules.

You can move IMAP messages to folders "On My Computer", but then if you
need to access elsewhere you won't be able to see those moved messages.

Moving to IMAP is different for each provider. For example, Comcast does
not have IMAP accounts, so I forward my Comcast POP accounts to a Gmail
IMAP account. I keep send only accounts in Entourage for my Comcast
accounts so I can reply using the Comcast email address.

Some hosts make you select which type of account you want online and
others just have you enter the account in your email client by type.

You do need to create new IMAP folders. You can move/copy messages between
the IMAP and folders "On My Computer".

If you ask specifically to your situation perhaps we can offer advice that
will help you.

I had a mixture of IMAP and POP and just recently made the switch to all
IMAP. Uploading to the server is very time consuming so you might just
want to leave the older emails archived and use the switch over to start
keeping mail on the server.

If you wanted to use both Entourage and Mail, you could have Mail import
from Entourage to get all the messages from folders "On My Computer" then
when you add the IMAP account, both Entourage and Mail would be in sync.
