Hi James,
For your first question you when you add a new farm you should use the
profile HTTPS. Zen have a video guide on how to get this working.

To answer your second question you need to create a farm listening on port
80 on for example on 192.168.1.200 with the profile HTTP. Then in the add
service section use the redirect option and enter something like "
https://192.168.1.200";

Someone may point you to a better option but this worked on my test box.
