There are several ways to add non-snmp devices (so far all devices I have added don't support SNMP). The first is to use the regular device add screen and select none for the discovery protocol. You can also add them in bulk from a csv (http://www.zenoss.com/community/wiki/tips-and-tricks/ImportDevicesFromCSVWithLocationInformation/) using a python script that I put together.
I assume from the map you are talking about the network map and not the google maps. For non-smtp devices you will need to manually create the interfaces and dependencies.
