Since no one has replied and I've spent the last week looking for the answer to a similar problem I'll put this here for the next unlucky sod that has to monitor a ZFS pool
I'm pretty sure you are seeing this bug: http://mail.opensolaris.org/pipermail/sfwnv-discuss/2007-July/000793.html I haven't found a fix but one determined individual found an interesting way to do it in cacti, though it's more of a kludge and doesn't really address the problem with snmp or the way ZFS works it will at least get you percents. I imagine this could be adapted by modifying the diskspace collector and putting it in its own container under /servers/solaris (really only a theory at this point) the down side is you'll need to modify the snmp configs and install a script on the device being monitored.
