There won't be a performance hit beyond that of RAIDZ2 vs. RAIDZ.
But you'll wind up with a pool with fundamentally single-disk-failure tolerance, so I'm not sure it's worth it (at least until there's a mechanism for replacing the remaining raidz1 vdevs with raidz2).
