You have two ways to increase the size of this pool (sanely). First, you can add a third mirror vdev. I think that's what you're specifically asking about. You do this with the "zpool add ..." command, see man page. Second, you can add (zpool attach) two larger disks to one of the existing mirror vdevs, wait until the resilvers have finished, and then detach the two original (smaller) disks.
