I'll second, third and fourth the Pacific Coast Highway. It took all day to get from SF to LA, but it was worth every second.
The Hearst Castle is off the PCH: http://www.suite101.com/view_image.cfm/200204 http://www.hearstcastle.com/ but you have to get there during the day, I think some of the tours cut off at 5pm. Also stop at EVERY scenic turnout and take tons of pictures.
