I'm not sure about some good references but I can tell you that the main two
advantages I see to using a FE/BE setup are:

1. Ability to edit and replace the FE without worrying about the data in the
BE.  Think about having a "live" database where the data is being changed
all the time.  If you had all the Queries, Forms, Reports, etc. (FE) in the
same file as the Tables (BE), then every time you edited a Query, Form,
Report, etc., you would have to manually copy over the live data from the
"live" database before replacing the old file with the edited one.
2. Ability to customize multiple FE databases to interact with a signle BE
database.  Say you want to program a Timekeeping application, and you want
to have two stations to clock in/out.  This is difficult to do without using
a FE/BE setup.  You would have two separate databases with two different
sets of data.  Sure, you could setup a routine to merge the data later, but
wouldn't it just be easier to create a single BE, and link to it from each
of the FE's.  Then all of the data is "live" instead of being collected as
batches of data and merged after the fact.  Plus, this allows users to clock
in at one station and clock out at the other.  Also, consider if you wanted
a third FE customized for Payroll, who could monitor or interact live with
the data.
