It depends on what project you are working on. If you are working DV, then it's 
DV-AVI. If you are working on HDV, you can do the same too but have to change 
from odd field to even field first. 

Or you can export within Premiere using Adobe Media Encoder to DVD MPEG-2 files 
prior importing to Encore.
