You asked if this was the way the pros do it, yes it is.
I've done it like this on two large-scale productions, so believe me, the
"pros" do it;)

This is also a perfect example of something you would need a higher-class
editing program to achieve. Final Cut, Vegas, Avid or Premiere. iMovie,
Movie Maker and such won't let you fine-tune the speed of audio/video.
