Thanks, Lee and Edward, for your very helpful responses. I had posted my question before realizing that there was in fact a pulldown menu with other formats available. Duh!
My alpha channels were in fact blank, but their presence created a very minor issue for Photoshop when saving as a .jpg, which is usually good enough for my purpose.
