For Proxmox, I find it "clunky" to deal with and limited on redundancy/fault tolerance. Everyone has their own versions of what this means but in my world if I lose a physical server I want failover to another system within a second or two - couldn't get this Proxmox. Now that's assuming you are talking commercial Vmware.
Even free ESXI vs Proxmox, I still find VmWare more solid especially if you have heavy load on a machine. For Xen Server, I was actually referring to the open source version (from Citrix) ... nothing it can't do, especially if you're handy with scripting. The only thing the commercial version does better is automated patching but that's assuming you like to do patching through a GUI vs CLI - personally, much prefer CLI on that kind of stuff.
