A friend of ours gave us a quart of peppers canned in dry sherry.
They're mostly habanero and scotch bonnet. The scotch bonnet has similar
heat to the habanero, but is a bit sweeter. That jar has lasted me
almost a year now; but I think I will run through what's left in another
couple months.
I love the heat, but I also like to keep my digestive system intact.

I like the flavor of unripe (green) habernero, its almost a chocolate
flavor, and if you slice them in your egg pan then put the egg on top,
and top that with fresh raw ones, the crisp fried ones mix with the
raw for an amazing flavor. Same with serrano, green is when they taste
best.
We did ghost and reaper last year for a lark, the reaper is just to
hot, no good for flavor so we didnt grow them this year, and only one
ghost plant. Im growing jalepeno and habernero for the food pantry
this year, we will see how that goes, i picked a bag of them (if youre
going to bag peppers, always paper, never plastic) today.
Whats really good is to dry ghost peppers in the oven (when no ones
home) and dry green habernero in the smoker, mix 2 to 1 favoring the
habernero and grind them in a mortar and pestal stems and all. That
smoky habernero and chemical castration ghost heat makes a powder
thats out of sight.
I have a mix growing this year, habernero, serrano, ghost, jalepeno,
cyanne, some lemon flavored hybrid, and a few others. This is the
summer i intend on hitting that perfect flavor to heat ratio in a hot
sauce.
A warning, i discovered the hard way messing around with ghost. Dont
dry them and crumble them over food right before you eat it. It makes
it into your upper intestine before it rehydrates enough to leech its
capsciacin, and unless youre into hours of glass shards, knives and
angry rats going through your guts, either use fresh or powdered, if
using crushed, rehydrate it first

edible. Not so
the Carolina Reaper. Those are weapons grade.

I was wondering if one was milder than the other. I can't
