If you think AGI has to start with something simple, then you should take PM's advice and just do it! Try a lot of really simple ideas and see how far they get you. The thing is that you are actually using double speak to say that something that is extremely difficult is actually simple. It is an exaggerated contradiction. I worked a few full days on my data-management system and to me it now seems simple. But that is only because I am so familiar with it, at least at one level of understanding. But there are many other levels of understanding that I am not casually familiar with and so the code has lots of bugs in it and when I try to add something to it I have to debug the new functions before they start to work. It is simple on one level but on other levels the code is extremely complicated and beyond my understanding.
