Hi!
If you wanna do some simple test-recrodings, just try arecord (add -vv to
your command-line). The latter would help to see a lot of maybe useful info
(helped me a lot!).
for other text-based recording, I would suggest: ecasound, which can be
found at:
  www.eca.cx/ecasound
or ardour (with ardour-ksi, although I still can't work that out :-))
Ardour is also a great idea for gui (it does really a lot).
For a more midi-based work, I still think muse would be the tool of choice.
We saw it at the linuxtag and it is great and progressing still.
Note: For ardour you will NEED jack. I think ecasound and muse can do
without it. FYI: ecasound also should work with oss and esd.
All mentioned apps can also be found on Dave Phillips' great linux-audio
site at:
http://linux-sound.org (look for JACK, Multitrack recorders/mixers). Your
next good stop would be LADSPA. I don't know if you've worked with ladspa
plugins so far, but there are some really, absolutely great FX.
I hope that helps... And Have a lot of fun...
    Kindest regards
       Julien
