The output of the emulator is PCM data.  I guess ScummVM uses SDL, but
I don't know how to configure that to use ALSA.

This is the port for external MIDI devices.  If you don't have some
hardware synthesizer, you have to use some software synth like
Timidity or fluidsynth.
