On my system, Amanda manpages are in /home/vectro/amanda/install-2.5.0/man --
so I definitely have specify the directory manually. :-)
As a side note, I also install with a prefix (e.g. /pkgs/amanda-2.5.0b2)
and I use "graft" to create symlinks into a more standard directory.
In fact, I have several versions of amanda online, and one of them
is "current" (the one that graft made symlinks for). And I can switch
between them in a matter of seconds.
"graft" is just a perl script, but works perfect for these things.

And of course, the man-pages appear in the normal MANPATH too.
