You've got it - these are temp directories used to unpack the MIME encoded
messages for virus/spam scanning.  Amavis will remove these, unless an error
is encountered, in which case, its up to you.  It appears there is an error
occurring, as is also suggesting by the messages reappearing (as you mention
below).

That's funny! :-)  Seriously, put the clamps on how large an email you will
accept in Postfix.

You can keep deleting the newly created temp directories all you want, but
until you remove them from the postfix queue, they will continue to be
resent.  Do a mailq to see what files you have in the mailq.  Postfix will
resubmit the messages until it receives an okie-dokey message from amavis
(i.e. amavis successfully re-queues the message to postfix).
