The Android email client is open, available in the usual repo.

K9 is open as well, hosted on Google Code.

Then there is a way to use JavaMail with Android, although that requires some tweaks, as I understand (removing / replacing the use of JavaBeans storage API). Mail Droid does this, and although it's closed source, you could try asking the developer about where he got the changes - perhaps those were done by someone else?
