Shouldn't it be the opposite?
This is not Debian Stable, packages should be up-to-date and if people want older package they have to package it themselves in AUR.
Am I wrong?

Correct me if I'm wrong, but couldn't we package thunderbird 78 in
something like testing or the AUR for people who absolutely need 78, and
then keep the stable version how it is?
