I use ARInside and it DOES list workflow on a per field basis and allow you to drill down.  Here is a screenshot to illustrate - if the listserver lets it through

Yes...ARSDoc works superbly on 6.3.

 

ARSDoc is the best doc tool i've seen for ARS. You can download a 6.3 compatible version from www.mattreinfeldt.com

 

ARInside sports a lovely interface but does not show ALs/Filters on a per-field basis.
