Lisa, If you have table chunking enabled to the best of my knowledge $LASTCOUNT$ would return the number of rows in the current chunk up to a max of the limit your chunk is set at. You might be better off using a direct sql to return the count of the query you are running on the table field to get the real count in this case.
And yes to answer your question $LASTCOUNT$ would return the integer that contains the count of table field in your current chunk.
