Yes, absolutely you can configure multiple outgoing mail boxes on BMC Remedy Email Engine 7.1, you just have to add configuration in "AR System Email Mailbox Configuration" form.
Please refer "BMC Remedy Action Request System 7.1.00 Administering BMC Remedy Email Engine" guide, chapter 3 - "Configuring mailboxes in the BMC Remedy Email Engine" for detailed steps.
