I have a little java app I wrote that logs into all of the servers in a group and gives counts of users on each node, and then also compares them to give unique counts, as well as active (last access within last hour) unique count :)

In 7.5 there is something called license tracking to give you a better current and historical perspective of licenses used down to the application level. However, I've also yet to get this to work accurately for a server group environment behind a load balancer. Due to both of these reasons I forced to take manual snapshots with cut and paste into excel and then filter to unique user records.
