I see this behavior with the buttons grayed out when selecting the field when I have clicked on "Show fields not in view".
I think you need to add the field to a view temporarily or select a view one that it is already on. If you look at the "Default User View" of the Help Desk form instead of "Best Practices View" the field should be in the view already. Then select the field from either just tree overview or table overview mode of the outline. When I do that, the buttons are not grayed out.
