We've been using exchange on VMware for 4 years and assp in a virtual
debian for 2.5 years. We're using ESX server and our storage is FC SAN
based. The performance is pretty good. 

There are almost no reasons anymore for not running virtual machines. We
do get better uptime for our virtual machines than our physical hosts as
we can migrate our VMs between physical hosts as needed. DR is also much
easier (and cheaper) in a virtual environment.
