ASSP is "server neutral", so, as long as a server "speaks
SMTP", ASSP will play nice with it :) the bottom line is.. pick
whatever mailserver you want/know/prefer :)

Start by evaluating the number of mailboxes and the amount
of traffic you'll need to manage, the features you'll need and
then move on planning your setup and picking the server

For a midsize setup on windows, I'd suggest you to have a
look at hMailServer and/or MailEnable; placing them behind
ASSP will give you all the flexibility you may need :) also, and
since we're at it, evaluate the opportunity to setup your whole
infrastucture using Virtual Machines (e.g. VMware) such a thing
will allow you to easily scale your infrastucture if needed just by
adding further VMs as needed, it will also unbind your servers 
from the physical "iron" sitting below them allowing you to add
more "iron" if needed to support your traffic also, as an added
bonus, keeping backups of your VMs will allow you to set them
back up in case of "disaster" and go online in a short while :)
