I am not by any means recommending this to anyone but I wanted to publish this for reference.
I have an Asterisk system connected to a provider via IAX trunks. There are 32 phones on our network and we have about 400 calls per day to/from our system. The hardware running this is a Pentium Pro 400mhz with 256MB ram and a 9GB scsi hard drive. Everything is working great even on such meager hardware.
