*Which* SIP phone?
Some of them, like the Gradstream Budgettone, have a "dial this number when user picks up" configuration option. If you have such a phone you can create an alias for the s extention like so:
exten => 666,1,Goto(s,1)
And instruct the phone to dial '666' when the phone is off the hook.
