Internal users can leave messages without problem. I'm leaning towards
a codec problem but everyone can receive calls just fine the whole
time. Besides, external callers can hear the VM prompts so it's not
like the audio stream isn't being setup at all. It's hard to understand
how it could be a firewall issue since it will run just fine for a day
or so then flake out.
One off-topic possibility would be a disk-full situation; just a random
thought. Lots of programs don't behave well when the disk fills up :-)
