I am on Asterisk 1.6.2.14, my settings look like this:

[general] ; general settings in my sip.conf
context=default
port=5060
bindaddr=0.0.0.0
srvlookup=no
defaultexpirey=300
videosupport=yes ; Turn on support for SIP video
useragent=asterisk
alwaysauthreject=yes
allowguest=no
t38pt_udptl=yes,redundancy
qualifyfreq=15

[1005] ; this is the peer for the phone
type=friend
context=default
secret=somepassword
host=dynamic
disallow=all
allow=ulaw
allow=g729
allow=h263
allow=h263p
dtmfmode=rfc2833
canreinvite=no
nat=yes
qualify=yes
mailbox=1...@default
subscribecontext=default

On the phone I did nothing special, just entered the SIP username,
password, proxy and domain. I did not even configure a STUN server.
The phone came with firmware 2.50. I upgraded one to 2.76, but that
seems a little less stable than 2.5
