Leif,

You will experience packet loss for sure using any wireless service.

But if this is your only solution available to you, I would recommend the 
following setup:

Use an Asterisk server with a Sangoma Transcoding card to handle iLBC codec 
(Digium transcoding cards do not support iLBC).

The iLBC codec is a very low bandwidth and handles packet loss very well.

I tested this setup and I was amazed about the voice quality using iLBC. I 
couldn't tell the difference.

Polycom Phones are compatible with iLBC codec.
