Thanks everyone for the suggestion.  Wireshark is great !  I am wondering if 
there is a way to replay some packages on same host and port from the captured 
traffic.

  Wireshark ( http://www.wireshark.org/ ) should do it for you if your on a 
dumb hub or if your on a span port on a switch.

  You can even get it to construct a wav file if the audio stream was in g711.
