I run Asterisk machines (not astlinux) under Fusion all the time.. not high
volumes of calls.. but I have run up to 3 at a time all talking to each other
in a virtual "Cloud to client" scenerio.. all on a macbook air 2012..
amazingly it works well.. I imagine with astlinux it might even work better
I have also run asterisk (not astlinux) on QEMU (KVM on fedora 17).. and it is
actually pretty decent...
I didnt cite these other instances of me and VM in my last message as they
werent astlinux.. but I do lots with asterisk in general in VM's nothing true
production hosted voice yet...
just a lot of testing so far

No reason not to, though VMware or VirtualBox hosting is required.
Using the VBoxManage utility here is an example to create a .vmdk image:
Convert AstLinux install files to VMware

I recall Darrick doing this with VMWare ESXi, and ESXi might accept the
AstLinux flash image directly.
For best performance, use a SCSI virtual disk with the "lsilogic" SCSI
virtualDev.
My only real-world experience is with a test instance using VMware Fusion.
