Don't worry, be happy. Really, the storage shown is good enough to be practical, and you don't need to do anything you can't already do in Settings. Moreover, just because an app can use docs and data storage doesn't mean there is any, or that it will be accessible through Drive.

Still, if you really want to know, and if you're careful, dig around in "~/Library/Mobile Documents". "com~apple~CloudDocs" is your iCloud Drive. You could then delete the stuff you wished vanquished.

iCloud Mail always takes up a tiny amount of storage, and sadly it can't be disabled once enabled. That doesn't mean you've got to use it, though; forward all your mail to an invalid address and it'll bounce, and change your Apple's primary email address to your true one and ignore the iCloud alias. If you never used Mail, I wouldn't worry about it, even though it is annoying.
